Wine pairings become a tad challenging when the food in question has a large range of flavors, a cuisine known for this in particular is genuine Mexican food. With the combination of hominy, pork and chilies topped with cilantro, lime, avocado and radish the classic Mexican comfort food called pozole is a real challenge for pairing. One of the easiest ways to pair with this dish is to find a crisp white with lime notes that will make all the flavors in the dish pop like the spritz of lime juice on top of the stew does. But this is a classic Mexican dish that deserves a lot of thought too, a dry white would not help any to calm the chili fire of pozole. For this reason a juicy rose would be a good pick, one with apple or lemon on the palette. This way the spiciness is calmed as well as the flavors complimented.
